Clementine or Mandarin pound cake

A few days ago I bought a huge bag of clementines, they looked so nice and bright I couldn’t stop myself from buying them, before leaving the grocery store I’ve already made up my mind about what to cook once home.
This recipe is a wonderful, special, full of flavor, exquisite pound cake.  Combined with a coffee early in the morning…just brightens up your day.  Let me know what you think of it.

Ingredients
½ Cup Butter (1 stick)
1 Cup of Sugar
3 Eggs
8 oz Mascarpone Cheese
Juice from 4 Clementines
1 ½ Tablespoon Clementine zest
2 Cups all-purpose flour
1 Teaspoon Baking Soda
½ Teaspoon Salt
Confectioners Sugar to dust


Preheat the oven to 350 degrees.  Cream the butter until smooth, add sugar and continue mixing.  

Add the eggs one by one mixing after each addition.  Add the mascarpone cheese, the clementines juice and zest.


Combine the flour, baking soda and salt in a bowl.  Gently incorporate the flour mix to the butter mix.  When well-blended pour the batter into a 9x5x3 pan previously buttered and floured.  Bake for 40-45 minutes or until toothpick inserted in the center and comes out clean.  
Let the cake cool for 10 minutes on a cooling rack before removing it from the pan.  Once at room temperature dust the cake with the confectioners sugar and serve.
