Peach and Ricotta cheese moist cake

I’m excited to share something very special we received a few weeks ago.  A friend sent us a handmade tray (he actually did it), which it couldn’t match better with our style and my way of serving food.  The tray is meant to be for the family but I kind of keep it to my side (if you know what I mean).  Besides how much I/we like the tray, it meant a lot more to us, in this days that everybody is rushing from one side to the other, immerse in their own world; that somebody stops and thinks about us and then go through all the time/trouble/cost/work that creating the tray suppose, it just have to mean only one thing, he really appreciate us a lot.  This will be the first of many posts to come that will include our precious tray.  Big THANK YOU “la mieeelll”.
About the cake, I got inspired by the wonderful peaches I see everywhere around at this time of the year!  I just love those little places standing by the road we find a lot when traveling to the hill country, can stop myself from buying some bags full of this great fruit. 


Ingredients
½  Cup Unsalted Butter (1 stick)
1 ½ Cup Granulated Sugar
1 Cup Whole Milk Ricotta cheese
3 Eggs
2 ½ Cups of Flour
1 Teaspoon Baking Soda
½ Teaspoon Salt
2 Cups pitted and peeled Peaches unevenly mashed
Confectioners sugar to dust

Preheat the oven to 350 degrees F. Grease and dust with flour a 9 x 5-inch loaf pan, tapping out excess.
In a large mixing bowl with electric mixer, beat the butter, ricotta cheese and granulated sugar until light and fluffy.  Beat in egg, one at a time, beating well after each addition.
Combine the flour, baking soda and salt in a bowl; add the dry ingredients, a small amount at a time until just incorporated.  With the help of a spoon stir the peaches into the mix.
Pour the batter into the pan and bake in the oven for around 45-50 or until toothpick comes away clean.


Let the cake cool for 10 minutes on a cooling rack before removing it from the pan.  Once at room temperature dust the cake with the confectioners sugar and serve.
