Fresh light Tomato soup


For a soup person like me, there is always a perfect excuse to have a soup.  I can have it at any time during the day or any season during the year…however it’s Winter time here in the North which makes it ideal to enjoy a nice, made out of scratch, hot soup…



Ingredients:
4 Cups fresh tomatoes peeled & chopped
1 Cup Carrot grated or chopped
1 Cup chopped Celery
1 Small Onion chopped
4 Cups vegetable broth
Salt
Pepper
Basil or parsley to serve on top
Grated Parmesan cheese

Place the peeled tomatoes in a large saucepan, add also the carrot, celery, onion and broth, let it boil and then simmer over medium heat for 20-25 minutes.  Set aside; introduce a hand blender to the saucepan until the whole content is smoothly blended and well combine.  Season to taste with salt and pepper.

Serve the soup in bowls, sprinkle on top with thinly chopped basil or parsley leave and grated Parmesan cheese.  Enjoy it free of guilty!

  1. I am also a soup person but I've always been a Tomato soup person above all others soups!!! and this one's free guilt :) Like it, once again!!
