Mixed Green Salad with Cherry Tomatoes, Dates & Almonds


I don’t know about you, but I like very much to start the week with a nice salad menu, of course this have nothing to do with all what I ate during the weekend! Cheers for all the ones like myself that enjoys so much the weekends that have to start Mondays with a salad.  Here is indeed a very nice salad recipe so not to feel so guilty!






Ingredients:
2 Cups of  Baby Red and Green Romaine Lettuce
2 Cup Boston Lettuce
¾ Cup Cherry Tomatoes
¼ Cup Dates cut in 4
¼ Cup Blue Cheese crumbs
¼ Cup Sliced Almonds
4 Slices Prosciutto
Crackers or little toast

For the Vinaigrette:
¼ Cup Olive Oil
2 Tablespoon Balsamic Vinegar
1 Teaspoon Honey
Salt
Freshly ground black pepper

Lets start with the vinaigrette: Mix all vinaigrette ingredients in a small Tupperware or jar lidded.  Shake it until all ingredients are well combine, taste for salt and/or pepper.
In a salad bowl combine the lettuces, cherry tomatoes cut in halves, dates, blue cheese crumbs and almonds. Pour vinaigrette on top and mix.
To serve, arrange in plate the salad in the center and fold two slices of prosciutto to one side, on the opposite side set nicely some crackers or toast.
Makes 2 servings.
