Marijo’s salad or Fresh green salad with strawberries, Parmesan cheese and vinaigrette


Can’t believe winter is already gone and hot weather is already hitting us … at least here in Texas! 
I was doing lots of little things today and wanted to have something fresh for lunch, the recipe today I’m posting is a refreshing salad that is inspired in one of my best friend’s taste.  Whenever I’m buying strawberries I always remember her description of what an amazing strawberry looks like, so here I was with a bunch of gorgeous strawberries ready to prepare my salad… Give it a try!


Ingredients
2 Cups Baby Red and Green Romaine Lettuce
1 Cup Arugula
1 Cup sliced strawberries
3 Tablespoons shredded Parmesan cheese
For the Vinaigrette:
¼ Cup Olive Oil
2 Tablespoon Balsamic Vinegar
1 Teaspoon Berries or Strawberry Syrup
Salt
Freshly ground black pepper



Mix all vinaigrette ingredients in a small Tupperware or jar lidded.  Shake it until all ingredients are well combine, taste for salt and/or pepper.


In a salad bowl combine the lettuce, arugula, sliced strawberries and Parmesan cheese. Pour vinaigrette on top and mix.



Serve it right away while the ingredients are still cold; add some nice ciabatta toast to one side if you are feeling those carbs cravings.

Makes 2 servings.
